I am constantly trying to make things better and I want to be able to provide you with the most nutritious, delicious and beautiful bread in the Gallatin Valley. And you are the ones that can help me improve! This week I made one of my recent whole grain experiments for the Bakers Choice: 100% freshly milled whole grain KAMUT with sesame seeds. How have I never put those two beautiful golden ingredients together in a loaf? Was it not dark enough outside for me to be craving sunny food? Besides having a beautiful color it has additional health benefits. KAMUT wheat has higher protein and mineral levels than modern wheat and higher levels of lipids which produce more energy in the body than carbohydrates. Sesame seeds are an excellent source of copper, a very good source of manganese and many other minerals. This loaf is a power house! Add some avocado to it and lunch is ready. I have a feeling that this bread will get a more regular appearance this winter. I like to eat “sunny” foods to make up for the reduced sunlight of the winter months. Not sure if that actually works, but it certainly helps me mentally to prepare bright, glowing foods during the darker months of the year. Enjoy this beautiful snow we have been getting I hope it continues, since there is nothing I love more than snowy days!!
