This week has been full of fermenting for me. I had some special bread orders to bake and also brewed some more JUN, the champagne of Kombuchas. The simple and ancient art of fermentation never stops to amaze me. Here I have this funky looking SCOBY (symbiotic colony of bacteria and yeast) sitting in a glass jar. I feed it some green tea and honey and let it do it’s magic. A few days later...
...I mix ginger and lemon with it or any other flavor I can think of and let it sit some more. Next thing I know I have this amazingly delicious and super fizzy drink that’s choke full of probiotics! Isn’t that incredible? The same thing with every loaf of bread, I am still amazed that my little jar of mother culture just needs a little flour and water and before I know it it’s bubbling and ready to raise every single loaf of bread. So beautiful. So simple. So good for you. With all the fermentation going on in my house I also re-watched some of the Netflix series COOKED by Michael Pollan. If you haven’t seen it yet I highly recommend it. The book is equally as good. One episode is all about fermenting and another all about making naturally leavened sourdough bread. It’s a great educational series. He talks about the benefits of fermentation and how we lost touch with cooking as a society. We spend more time watching cooking shows and less time in the kitchen actually preparing delicious meals. I really hope you all take time out of your busy schedules this week and create at least one delicious meal to share with each other!
