But with limited amounts of bread...We had a great day mixing and shaping with extra hands to help and Finley being brought in and out of the bakery by his dad all day. I decided to make more bread than last week since I had help and use the new (to me fridge) for the first time to proof the extra loaves. Bad idea! I should have tested it to see if it worked before making all this bread!! We finished shaping and loaded up both fridges with beautiful bread. A few hours later I did one of my checks before going to bed and the loaves in the new fridge looked basically fully proofed! SH#$%! We scrambled to get as many into the already full fridge as we could... Now we have to see what I can save when I bake later today. I wish I could have turned the oven on right then but things don't really work on my schedule anymore now that Finley is in charge and needing my attention especially at night :) So now I wait until my friend arrives and can hold him while I load the oven... Practicing patience...
Either way, I hope to see you bright and early at the market tomorrow!
