Happy St. Patricks day! Do you have some fun green foods and drinks ready for the day? Mine is going to be simple but it starts last fall… As the temperatures were dropping last November I decided to bring in my chive plant. Before our moves last year it had always been in the ground, insulated by the soil around it and I never worried about it. But at our current house we only have a deck with planters so I thought it might not survive the cold winter in it’s tiny pot without the insulation of the soil so I put it in the garage and forgot about it until a couple weeks ago. When I found it, the plant looked totally dried up and sad. I moved it to the living room window anyways, gave it some water and a little TLC... ...Only a couple days later its beautiful spring-green tips were poking through the soil!! This chive plant is one of the few outdoor plants that survived all our moving last year, which made me even more happy when I saw it sprouting. It grows so quickly, which is fabulous considering one of my favorite spring snacks is “Schnittlauchbrot” (bread with chives). So my Irish green food for the day is going to be just that! A deep dark toasted slice of Sunflower Seed bread, spread with lots of Irish butter, topped with finely cut chives and a sprinkle of sea salt.
