I loved getting all your wonderful comments on the order forms, they make my day. Hearing that your kids refuse to eat “junk bread” makes me more than happy. Thank you for letting me bring “real” bread to your table. Eating great tasting and healthy bread is something our society has moved away from (but it’s coming back!) instead we have been inundated with processed junk bread. When you look at the ingredients on super market bread it takes up half the package and most of it I can’t pronounce. STELLA bread is made with flour, water and salt sometimes a few spices, seeds or nuts. That’s it! The most important ingredient that is never listed on any package is TIME. Without time there is no delicious and nutritious bread. Time is very valuable (and expensive) and in modern society we often discard the importance of it and faster is considered better. As you all know fast and good food don’t go together. The bread that you are eating today started it’s life cycle on Tuesday morning. The enzymes and bacteria have been busy since then digesting the starches and sugars, breaking down phytic acid which likes to bind with iron and zinc and strips our bodies from important minerals without the natural fermentation process. Hopefully you can add more and more naturally fermented foods to your diet and you will notice a positive change in your health. I am having some of My Living Nutrition Kraut on my toast today.
